Carrot- Hazelnut cake

Preheat oven 200°C

put 100g of hazelnuts in for 10minutes

bowl 1: 200g self raising flour
1 tsp bicarbonate of soda
2 tsp ground cinnamon
1 tsp nutmeg
50g ground almonds

bowl 2: 175g dark brown sugar
180ml hazelnut oil
250g carrots grated
zest of one orange
3 large eggs

Whisk all the liquid ingredients in bowl 2 and to bowl 1.

chop half of the hazelnuts and add to bowl 1.

pour in greased baking tin about 23cm diameter.

Cream cheese topping:

500g full cream cheese

2tbsp icing sugar

juice of half orange

decorate with rest of hazelnuts.
