Miss Beany

My lunch yesterday...

Only a bag of parsley, eggs, cheese and jam were in the fridge.

In my cupboard things looked a lot better, and I picked out:

 1 can of kidney beans
1 can of black soy beans
small jar of red pesto
bag of pasta

So I worked with what I had, and created the above.

Serves 2


Each can is sold as 425g, but less than half of each can will be enough for two. Use whole cans to serve 4.

200g Eden black soy beans
200g red kidney beans in water
300g dried pasta (any shape you like)
2 tsp red pepper pesto
1 tbsp soy sauce
1 garlic clove crushed
1 tsp lime juice
1tbsp olive oil
20g chopped parsley


: Boil pasta in twice amount of water
: Meanwhile add olive oil to large frying pan

+ drained kidney beans and drained black soy beans
+ soy sauce
+ lime juice

: Keep beans on a low heat for 15 minutes

9 Go back to the pasta and drain once 'al dente'.

: Put pasta back in the pan, add the garlic and red pesto

: Turn off the beans, and add to the pasta, stir gently

: Season and stir through fresh parsley

: Grate cheese and serve straight away

< Store left over beans in tupperware and use again.

Next Time

might add fresh tomatoes instead of pesto, and mozzarella.
